So I did an Indo-Italian fusion and it was an EPIC success. If you've never had paneer, it's an Indian cheese (similar to Halloumi) that's very versatile and used in many different regional dishes of India. It has a consistency similar to Extra Firm Tofu. For this dish, I pan fried the paneer in ghee and turmeric. Made a pasta sauce with some indian spices and sprinkled the pasta with grated Amul cheese. I can't describe how delicious this recipe is! Here's how you make it.... Ingredients:
" 2 cups pasta, cooked " 1 cup paneer, diced " 2 tomatoes, chopped " 1 tsp garam masala " ó tsp turmeric powder " 1” ginger minced " 4 cloves crushed garlic " 1 large bell pepper, thinly sliced " 1 large red onion, thinly sliced " 6 tbsp oil " Salt to taste " Handful cilantro, finely chopped Preparation: Heat 2 tbsp oil in a medium frying pan. Once the oil starts to turn translucent, toss in the paneer and turmeric powder and pan fry until the edges turn a crisp, golden brown. Set the paneer aside and in the same pan, add the remaining oil. Once it starts to turn translucent, add ginger, garlic and green chilies.. Add the tomatoes and continue stirring until the oil starts to separate. Saute for a minute then add the onions and peppers. Add the cooked pasta, stir everything together and continue on a medium flame until the pasta is heated up. Toss the paneer in and give it a good stir. Garnish with cilantro and serve
